Climate : Mediterranean, mild winters, limited rainfall, very hot and windy summers
Soil : medium texture, sandy, slightly clayey, a few meters above sea level
Harvest : traditional, manual
Grapes : Grillo, Catarratto
Vinification : at a temperature of 18° – 20° C the fermentation is interrupted by adding wine alcohol
Ageing : over 4 years in 80 and 50 hl Slavonian oak barrels.
Alcohol content : 18% vol
Color : light amber
Perfume : ethereal, with hints of cocoa
Taste : dry, soft with hints of dried fruit
Pairing : ideal with baked desserts, desserts with custard and spicy hard cheeses

Vinification : at the end of fermentation, pure wine alcohol is added until the optimal alcohol content is reached.

Aroma : intense, spicy, of dried figs and carob, with evident notes of hazelnuts and almonds
Taste : dry and very persistent
Pairing : ideal with hard and spicy cheeses and dried fruit; excellent with Tuscan cigars, excellent meditation wine

MARSALA - Fine Amber Dry

Vinification : maceration of the grapes and fortification with alcohol from wine aged for at least 2 years in oak barrels
Ageing : 50 and 20 hl oak barrels for over 12 months
Alcohol content : 17% vol
Color : intense amber
Aroma : Ripe fruit, with clear hints of cherries, plums and figs
Taste : sweet, warm and harmonious, with a slight aftertaste of aged wine
Pairing : excellent as an aperitif; exhilarating with chocolate desserts, baked goods and dried fruit
