Etna, where everything begins: our dairy has existed here for 50 years, in this rich and fertile territory, at the heart of three protected parks: Etna Park, Nebrodi Park, and Alcantara River Park. Alongside founder Carmelo La Cava, his children coordinate the work of a talented team. At the beginning of the supply chain, we meticulously select local partners: only the best breeders, the most reliable local producers, and the region's finest. Thanks to this meticulously assembled team, we process over 3 million liters of milk each year. This fine milk is used to make cheeses renowned throughout Europe. What makes a flavor unique? The land it comes from, its climate, its vegetation, its pastures and animals, its people. Every day, the milk we deliver is meticulously screened and pasteurized: no cheese is made with raw milk. Excellence requires care, and a La Cava cheese must be delicious, nutritious, and healthy. This is why we are a BRC and IFS certified company. Our delicious selection includes four large families with over 40 products: • Pecorino and canestrati cheeses made from sheep's milk or cow's and sheep's milk, enriched with flavors and spices. • Fresh, salted, and baked ricotta cheeses made from whey. • Stretched-curd cheeses made from cow's milk, including provola sfoglia, a La Cava specialty. • Very fresh dairy products, yogurt, panna cotta, and creams.
