Alongside the founder, Carmelo La Cava, there are his children to coordinate the work of a capable team. At the beginning of the supply chain, our scrupulous selection of partners in the territory begins: only the best breeders, the most reliable local producers, the excellences of the area. Thanks to the team created with such rigor, we process over 3 million liters of milk every year. From this good milk are products appreciated throughout Europe. What makes a flavor unique? The land from which it comes, its climate, its vegetation, its pastures and its animals, its people. Every day the milk delivered is analyzed with scrupulous screening and is pasteurized: no cheese is produced with raw milk. Excellence requires care and a La Cava cheese must be good, nutritious and healthy. This is why our company is BRC and IFS certified. In our delicious basket there are 4 large families with over 40 products: • Pecorino and canestrati from sheep's milk or cow's and sheep's milk, then enriched with flavors and spices. • Fresh, salted, baked ricotta, obtained from whey. • Stretched curd cheeses from cow's milk, including provola sfoglia, a specialty of La Cava • The very fresh dairy products, yogurt, panna cotta, creams.
