Provola fresca
Provola is one of the typical cheeses of the Sicilian dairy tradition. It is recognizable by its characteristic thread-like profile, with the head to which the string is tied for maturing. The fresh provola from our dairy has a tender consistency and a delicate and lactic flavor. We prepare it using only milk from small local farms, following an artisanal production style.
