Our prized black truffle (Tuber Melanosporum Vitt.) comes exclusively from Italian forests, primarily in Molise, where intensive cultivation is not practiced and therefore pesticides or fertilizers are not used. It has a dark gleba with brown and purple hues and very fine whitish veins, and a black-brown peridium with small pyramidal warts. HOW TO CLEAN AND STORE IT: Wrap the truffle in breathable paper towels that allow oxygen to pass through, place it in a glass container and store in the refrigerator, and change the paper towels daily. This way, the truffle will retain its fragrance for four or five days. When cleaning it, be very careful: black truffles, precisely because of their color, can be misleading and hide some soil residue, which you can remove with a damp, soft-bristled toothbrush. TIPS FOR USE: Unlike white truffles, it doesn't suffer from cooking (which should be done briefly and gently), thus preserving its extraordinary flavor and making it suitable for a wide variety of culinary uses. With its unmistakable and delicate flavor, the prized black truffle is exceptional for enhancing appetizers, first and second courses, soups, pizza, eggs, and can also be used to create exquisite desserts!
