Our white truffle (Tuber Magnatum Pico) comes exclusively from Italian forests, primarily in Molise, where intensive cultivation is not practiced and therefore pesticides or fertilizers are not used. With a bold and refined flavor, it's exceptional when eaten raw, but best avoided with elaborate dishes. The white truffle is by far the most prized and sought-after throughout the world for its undisputed quality. Ochre-yellow or olive-yellow in color, it has a smooth peridium and a grayish-white gleba in the most mature specimens. HOW TO CLEAN AND STORE IT: Wrap the truffle in breathable paper towels that allow oxygen to pass through, place it in a glass container and store in the refrigerator, and change the paper towels daily. This way, the truffle will retain its fragrance for four or five days. To clean it, simply use a damp, soft-bristled toothbrush to remove any remaining soil.
