Stracciata
Stracciata di bufala is produced with 50% buffalo mozzarella (torn, cut) and 50% cow cream, salt and rennet.
The cream is UHT, that is, pasteurized at 140° (it is not of our production but of high quality). Very similar to burrata.
It is available already packaged, in 250 gram jars.
