SONETTO
It is a soft cheese made from sheep's milk, like taleggio. Whole cheeses weigh around 1.2 kg. They can be portioned into 300g wedges.
The richness of our cheeses derives 1) from the quality of the pasture, very rich in aromatic plants that characterize a unique biodiversity in Europe; 2) from raw milk processing. Our milk is in fact hygienically perfect and does not require pasteurization. Therefore worked at low temperatures (36/38° C) it preserves all the nutritional and organoleptic value of such a precious raw material. Time, patience, care, wood, temperatures and the right humidity do the rest, enriching the maturing cheese with ever more concentrated aromas and flavours.
The processing is similar to that of taleggio. The breaking of the curd is coarse and the aging takes place in a humid environment which favors the formation of the flowery rind and gives it the characteristic consistency of a soft cheese.
