Soave Classico DOC Veneto

Classification: SOAVE CLASSICO DOC Description: This wine has a clear, crystalline color, with a savory and captivating aroma typical of the GARGANEGA grape variety, vinified practically pure as required by the production regulations, with an enveloping and soft acidity, never invasive, fruit of the generous Garganega grape. Vinification: The grapes are harvested during the first days of October at a good stage of ripeness, sometimes late, which does not limit the freshness but improves the body and complexity of the wine, without altering its freshness. Vinified in steel at a controlled temperature with the use of selected yeasts, capable of enhancing the peculiarities of the grape variety and extracting floral scents. The cleaning of the wine from heavy lees is followed, as with other whites, for at least a couple of months with a frequent and delicate batonage activity to keep the more elegant fine lees in suspension capable of giving complexity and elegance. The wine is then stored in steel until bottling to maintain its freshness. The grapes are selected from vineyards in the Soave Classico area, located in the Cru zone of Soave, primarily from the municipalities of Soave and Monteforte, historic Soave winemaking areas. Mixed/clayey soil, partially permeable due to the medium-small pebbles, with a mixed texture of pebbles, silt, and clay; basic pH. SOAVE CLASSICO is aged primarily in stainless steel with gentle, frequent batonage to enhance the extraction of the floral and elegant aromas of the generous Garganega grape. It then ages for 3-4 months in bottle before being released for sale. This strong, structured wine lends itself to medium aging for up to 3-4 years without suffering from the effects of time, but rather increasing its complexity and rounding out its acidity. 0.75 cl bottles, boxes of 6 Queen Pesante Verticale bottles.
