ROVIOLA (from the name of the cheese maker who created the product):

Mixed sheep and goat milk cheese, available within 15 days of ordering, is characterized by lactic coagulation, has a spreadable consistency, packs of 300 grams in trays, expires one week from packaging, if opened the shelf life increases to two weeks. The processing is of the lactic type, the milk used is pasteurized milk and comes from our animals raised outdoors. The richness of our cheeses derives from the quality of the pasture, very rich in aromatic plants that characterize a unique biodiversity in Europe. Time, patience, care, wood, temperatures and the right humidity do the rest, enriching the maturing cheese with ever more concentrated aromas and flavours. In this product, all the aromas and seasonality of the pastures' herbs come back to life. The richness and depth of its aromas and flavors differ according to the period of production, due to the gradual presence of various herbaceous essences during grazing. Based on the periods, from May to October, we have a cheese made from goat's milk only. In winter, however, we have cheeses made from goat's and sheep's milk. It is interesting to appreciate the differences between the two types of milk.
