PASSITE RICOTTA

Ricotta is an extraordinary product, light, sweet, digestible, very versatile, usable from appetizers to desserts. However, its water content makes it poorly preserved, so a process has been developed to make it even more palatable and at the same time transforming it into a long-life product. In this case it is left to dry for a few days in refrigerated and well-ventilated rooms in order to considerably reduce the free water content and a light salting aids this process. When it has reached the right consistency, it is massaged on the outside with extra virgin oil and aromatic essences which also perform an antiseptic function and placed under vacuum, they will keep for up to 6 months and beyond.
