We are supporters of the Mediterranean diet. The merits of fresh vegetables are undeniable. We then tried to make an excellent tomato concentrate which, when combined with dried white onion to give a sumptuous red mantle to our ricotta cheese, made it possible to discover an irresistible combination. Melting in the mouth, this ricotta gives all the taste of the Italian tradition that has made tomatoes the king of our recipes!
