PIZZO MARCELLO (from the name of the high pasture behind the company):
Soft Pecorino cheese, 300 gram packs, light vacuum-packed, aged for about three months. Expires one month from packing and shipping.
The richness of our cheeses derives 1) from the quality of the pasture, very rich in aromatic plants that characterize a unique biodiversity in Europe; 2) from raw milk processing. Our milk is in fact hygienically perfect and does not require pasteurization. Therefore worked at low temperatures (36/38° C) it preserves all the nutritional and organoleptic value of such a precious raw material. Time, patience, care, wood, temperatures and the right humidity do the rest, enriching the maturing cheese with ever more concentrated aromas and flavours.
The processing follows the classic pecorino procedure but the breaking of the curd is weaker.
The seasoning takes place in a cold and humid environment and lasts from about one to four months according to preferences.
