PEPE BIANCO 2013

I was born the 11 of October 2003 thanks to the combination of Mother Nature and Stefania Pepe and her mates’ loving hands (and feet) Vineyard BIOdynamically cultivated at spurred cordon, hill exposed at north, clay calcareous soil, antique white grapes vineyards selected by my grandfather when Stefania Pepe was born…more than 50 years ago! Vinification grapes are picked up by hand, pressed by feet and put to ferment into small concrete vats for 8-13 days, without adding any kind of yeast or sulphites. Aging I will stay into concrete vats for aging, after the natural decantation in 2 years time, I’ll be bottled strictly by hand for gravitational fall. Unfiltered. Oenological Analysis Alcohol: 12,80% Acidity: 4.8 SO2: 10,5 Drink me at 16°-18° degree - best if you can put me in ice…pour me slowly, I have some deposit. Look at me I’ve limpid brilliant yellow colour (if you pour me slowly..I am unfiltered!) Feel me My bouquet is delicate, intense and very persistent...find your flowers, fruits, hints of grapefruit, yellow apple, bananas, honey ...they remain in the glass even after you have drink all of me....because they comes from the natural yeast of my grapes ! Taste me I am full in your mouth, very intense, cool in acidity, warm in alcohol, harmonious, balanced and very persistent. Enjoy me I’m perfect with horse-d’oeuvre, first courses and fish main courses, fresh cheese, muscles, charcuteries and also white meat.
