MOLDED PECORINO

At the request of the Afghan population between 2004 and 2007 we gave life, on behalf of the Ministry of Foreign Affairs, to an extraordinary cooperation project where our master cheesemaker went to teach the art of cheese-making to populations still nomadic who live on sheep farming in Afghanistan . But cooperation also serves to learn and our experience has helped us to understand some small secrets on the use of the noble molds of cheese, essential elements for correct maturation where, fortunately, chemistry has not yet arrived, to interrupt the miracles of nature . Therefore, by combining our experience and their tradition, this extraordinary Pecorino Muffato was born, spicy, savory which invites conviviality and sharing of cheese, with excellent fresh bread and an inevitable glass of good Montepulciano d'Abruzzo.
