BRIGANTACCIO PECORINO

Like all our cheeses, BRIGANTACCIO is also produced with raw milk which, like most of human discoveries, derives from chance! To hide the looted cheeses, the brigands hid the pieces in terracotta jars where they remained for months sealed under vacuum, obtained by extinguishing the lit candle under the goat skin with which the jar was sealed. When needed, the wheels still moist because they were submerged in the same whey that the maturation produced in the jar, were taken out and dried on the outside under bran. This process gives high sapidity and a touch of spiciness. Tricks of Briganti, which make this cheese one of the most appreciated for the richness of flavors and the intensity of the aromas.
