Mozzare di Bufala Campana DOP
Mozzarella di Bufala Campana DOP is a simple product, produced with a short and controlled supply chain, the fruit of centuries-old tradition. The distinctive features of this fresh, stretched-curd cheese lie primarily in its raw material—fresh buffalo milk, particularly rich in fat and protein—and in its spinning process. This process involves hand-working the cheese curd with boiling water at the end of its maturation process until it "stretches," achieving the final product's distinctive consistency and characteristic "bouquet," determined by the unique microflora that develops during the various stages of production. The rind is extremely thin and porcelain-white in color, while the curd is free of holes and is slightly elastic for the first eight to ten hours after production, gradually softening thereafter.
