Mozzare di Bufala Campana DOP

Mozzarella di Bufala Campana DOP is a simple product, with a short and controlled supply chain, the result of a centuries-old tradition. Typical elements of this fresh stretched curd cheese are mainly made up of the raw material used, fresh buffalo milk, particularly rich in fat and proteins, and the stretching process. The latter operation consists in working the cheese paste by hand at the end of maturation with boiling water until it is "stretched", so as to obtain the particular consistency of the final product and the characteristic "bouquet", determined by the particular microflora that develops during the various stages of processing. The rind is very thin and porcelain white in colour, while the paste has no holes and is slightly elastic in the first eight to ten hours after production, and then increasingly melting.
