The ancient tradition of the Neapolitan culinary school, handed down by the expert Gragnano pasta masters, finds its highest expression in these formats.
Made with artisanal care in a workshop in the heart of the village "Le Campane" they lend themselves to being served with meat-based ragout, fish sauces as well as simple but delicious "pummarole".
These pastas are the result of a skilful processing established by a strict production specification that involves bronze drawing and slow drying at low temperature, so as to keep intact the high nutritional values of the precious organic Saragolla durum wheat semolina we use.
It has a low Gluten Index* (a measure of the structural strength of gluten) which makes it generally suitable for consumption for those who have difficulty assimilating the very tenacious gluten of modern grains, other than celiac disease.
