FIOCCO: Sheep HAM
Extensive breeding preserves the traditions of transhumant breeding, providing for a period of mating that goes from June to November. Furthermore, in the remaining months, they are grazed on meadows that boast different varieties of different aromatic herbs, thus guaranteeing a genuineness of the food products (meat and cheese) that would not be possible to obtain in other ways. In the pasture, the animal not only exhibits its natural behavior, but also rediscovers its eating habits, being free to choose the essences that most benefit it both in qualitative and quantitative terms. The animals are led to high altitude pastures to always guarantee them fresh and excellent quality grass.
It is obtained from the noble parts of the sheep. The slaughter takes place at zero kilometer at the company slaughterhouse, guaranteeing the utmost care for animal welfare in order to cause less stress to the animal and thus guaranteeing the best quality of meat.
It comes from the processing of muscle flavored with natural spices and salt. No chemical preservatives are used in any way.
