SPAGHETTI ALLA CHITARRA
Pasta alla Chitarra is so called because in the original Abruzzi tradition it is made using the 'chitarra', a tool consisting of steel wires stretched parallel to each other on a wooden frame, on which the sheet of pasta is pressed with a rolling pin. The use of the 'chitarra' means that the pasta has a square cross-section and a porous consistency that allows any sauce to adhere to it perfectly.
'La Campofilone' offers two variants of this speciality: 'Pasta alla Chitarra' has a greater thickness and is therefore more suitable for rich sauces and gravies.
