A Gragnano IGP pasta made with our Saragolla durum wheat, a grain with a bold flavor. The ancient tradition of Neapolitan culinary school, passed down by expert pasta masters from Gragnano, finds its highest expression in these shapes. Crafted with care in a laboratory in the heart of the "Le Campane" village, they are perfect for serving with meat-based ragu, fish sauces, as well as simple yet delicious "pummarole." These pastas are the result of skillful processing established by a strict production protocol that includes bronze-extrusion and slow drying at low temperatures, to preserve the high nutritional values of the precious organic Saragolla durum wheat semolina we use. It has a low Gluten Index* (a measure of gluten's structural strength), making it generally suitable for consumption by those who have difficulty digesting the tough gluten found in modern grains, separate from celiac disease.
