These pastas are made based on Timilia® (or Tumminìa) wholemeal durum wheat semolina from organic farming. Timilia® represents Sicilian-Mediterranean biodiversity and is the result of millenary natural selections.
All pasta shapes are bronze drawn and dried at low temperature (RAW) with a resting time of over 30 hours. These methods guarantee the complete maintenance of the nutrients and the unmistakable intense taste and aroma.
These pastas are also extremely digestible, because Timilia® has a low Gluten Index (a measure of the structural strength of gluten) which makes it generally suitable for consumption by those who have difficulty assimilating the very tenacious gluten of modern grains, other than celiac disease .
Rich in fibre, microelements and antioxidants, these pastas are suitable for those who pay attention to their nutrition and want to stay active and fit.
