These pastas are made from organic semi-wholemeal durum wheat semolina of Timilia® (or Tumminìa) from organic farming. Timilia® represents Sicilian-Mediterranean biodiversity and is the result of millennia of natural selection.
All pasta shapes are bronze-drawn and dried at low temperature (RAW) with a resting time of over 30 hours. These methods ensure the complete preservation of nutrients and the unmistakable intense taste and aroma.
Moreover, these pastas are extremely digestible because Timilia® has a low Gluten Index (a measure of the structural strength of gluten) which generally makes it suitable for consumption by those who have difficulty assimilating the very tenacious gluten of modern grains, different from celiac disease.
