Soft wheat flour Speciale Pizza
Product obtained by grinding and sifting sound and ripe kernels of national soft wheat freed from foreign substances and impurities, stored in suitable conditions. Very balanced flour ideal in pizzerias for medium/long leavening, suitable for preparation of crumbly and fragrant pizzas. We recommend a 75% hydration and a typical maturation of 24/36h.
