Inspired by the tradition of cultivating and harvesting olives, as well as the sensations and scents of the olive press and new oil, it revisits ancient preservation methods, such as brining and smoking, to create a unique and excellent product. The unique salt treatment in water is combined with the technique of smoking from incomplete combustion of olive wood.
