From the semolina of ancient durum wheat variety Russello, 'Le Siciliane' are born. These special and iconic pasta shapes from Sicilian tradition are well-known and appreciated throughout Sicily and beyond. The unusual and sinuous shapes capture any sauce in a voluptuous embrace, bringing joy and delight even to the most discerning palates.
They are bronze-extruded and slow-dried at low temperature (RAW) with a resting time of over 30 hours. These methods ensure the complete preservation of nutrients and the unmistakable taste and aroma.
Moreover, they are extremely digestible because ancient Russello wheat has a low Gluten Index* (a measure of the structural strength of gluten), making it generally suitable for consumption by those who have difficulty digesting the very tenacious gluten of modern grains."
