Blu di Mucca - Organic blu venied cow milk cheese
Blu di Mucca is a cheese from the herborine family that, in our dairy, is produced exclusively with Piedmontese milk.
The cheese is obtained by coagulation of the milk, adding during the processing different types of ferments of the strain Penicillium. It is required a long time of natural acidification to get its right paste consistency, semi soft.
The manual salting and careful drilling of the shapes during the maturation period gives the cheese its characteristic green grain and its particularly tasty taste.
The minimum ripening time is 60 days.
