From the semolina of ancient Russello® hard wheat variety, 'The Sicilian' is born. These special and iconic pasta shapes of Sicilian tradition are well-known and appreciated throughout Sicily, as well as in the rest of the country. The unusual and sinuous shapes capture any sauce in a voluptuous embrace, bringing joy and delight even to the most refined palates.
They are bronze drawn and slowly dried at low temperature (RAW) with a resting time of over 30 hours. These methods ensure the complete preservation of nutrients and the unmistakable taste and aroma.
They are also highly digestible because the ancient Russello wheat has a low Gluten Index* (a measure of the structural strength of gluten), which generally makes it suitable for consumption for those who have difficulty assimilating the very tenacious gluten of modern grains
